Variety: Pinot noir is a “difficult” grape; to grow, to deal with in the winery and to find truly fine examples of. Great pinot noir creates a lasting impression on the palate and in the memory. Its aroma is often one of the most complex of all varietals and can be intense with a ripe-grape or black cherry aroma, frequently accented by a pronounced spiciness that suggests cinnamon, sassafras, or mint.

Nose: Briary chocolate and just a hint of stemmy spice. Musk and brambly red berries and orange peel . Dark cocoa powder and roasted coffee beans. Wet red earth and undergrowth.

Palate: Spicey clovey with a campari like stalkiness. Roasted beetroot. Tight and brooding with a touch of savoury peat and beef jus. A round fresh palate with a twang of chalky tannin.

Food: Although pinot noir harmonizes well with a wide variety of foods, the best matches to show off the delicacy and texture of pinot noir are: prosciutto, salumi, kalamata olives. Grilled rabbit saddle with green olive tapenade. Braised asian beef shin with start anise and sticky fried rice. Warm salad of grilled quail and red peppers and lardons of bacon.
